The former country manor of San Román de Escalante is now a very special little hotel which houses treasures both artistic and gastronomic. Just outside the tiny village of Escalante, the 17th century country house is surrounded by forest containing many varieties of trees indigenous to this part of Cantabria, and just up the road is the 12th century hermitage of San Román that gives the hotel its name.
In the main house, the visitor finds refuge in one of the 16 spacious and comfortable rooms, each one decorated individually using pieces from the San Román de Escalante collection. The blend of antique decorative elements and period furniture with carefully chosen works of modern and contemporary art give the rooms incomparable comfort and warmth. Attention to detail and refined service make this hotel a haven of comfort to be visited at any time of the year.
Outside, the fabulous gardens contain another mixture of ancient stonework, country artefacts and quirky pieces of contemporary art. The newly constructed swimming pool is solar-heated.
The restaurant is in the former stables of the estate, just across the courtyard from the main building. The high vaulted ceilings expose tall walls hung with paintings in an eclectic mix of styles.
The area is ideal for visiting at any time of year. Down on the coast, the salt marshes of Santoña are an important natural resource, while nearby there is an interesting complex of caves. Even the Guggenheim in Bilbao is just an easy drive away.
Restaurant:
Located in the old stables, the restaurant offers a menu based on a compendium of imagination and culinary excellence. Dishes such as octopus with white bean and cuttlefish ravioli, angler fish with ratatouille and fillet of duck with "chii-takes" and almonds are some of the examples available.
